Ingredients
- 500 gr cracked white corn
- 250 gr white beans alubias
- 250 gr chickpeas
- 200 gr wheat grains
- 3 pumpkins
- salt
- wine
- miso
- pepper
- 3 leaks
- 2 onions
- 2 bell pepers
- 4 garlic
- 1/4 bok choy
- 2 spoons sweet paprika
Instructions
Prevent the screen from locking
Soak the cracked white corn, white beans alubias, chickpeas, wheat grains for at least 12 hours.
Peel the pumpkins and cut it in cubes, put them in a pot with some salt, boil them until they are soft, add enough water to cover the pumpkins.
Smash the pumpkins until you have a pure, this will be the base of the locro.
Optionally, add some wine, miso, pepper and salt to the base.
Chop the leaks, onions, bell pepers and garlic and add them to the pumpkin base. Stir until cooked. Finally add the bok choy to make the mix a bit more alkaline.
Add sweet paprika
Boil the grains in a separate pot, for at least 1 hour.
Mix everything together.
Serve hot.
